I had seen the marvel of bubble waffles on a friendly Northern Ireland vegan group on Facebook and have had my sights set on one since November. After a long, but not disappointing morning spent enjoying Titanic Belfast, I treated myself to a vegan bubble waffle from the Belfast Bubble Waffle stall in the Christmas market (on until 23rd December).
Their vegan options include strawberries, different sauces, oreos, ice cream, nuts and Lotus Biscoff spread. Though they were out of Biscoff spread, my bubble waffle was spot on. The ice cream melted slowly and complemented the soft, warm waffle. I opted for a lot of chocolate toppings but it wasn’t overly sweet. This comfortingly warm treat was just the thing on this drizzley, misty December day.
